The Villa Announces the Arrival of New Michelin-Acclaimed Chefs
The Xara Collection proudly welcomes new additions Executive Chef Davide Marcon (Right) and Head Chef Alan Tabone (Left) to lead The Villa’s kitchens, united by a passion for nature, innovation, and refined technique.
Bringing extensive experience from prestigious kitchens and a deep respect for ingredients and storytelling, the arrival of these acclaimed chefs underscores Rosami’s unwavering commitment to culinary excellence.
From Ivrea, Italy, Executive Chef Davide brings classical discipline and international expertise. Developing his passion through formal culinary training and refining it under Michelin-starred chefs across Europe, Chef Davide’s career took him to Milan to work alongside Chef Davide Oldani and later to London’s iconic La Gavroche, among many other renowned restaurants. Among the highlights of his repertoire are two signature dishes: Risotto with porcini mushrooms, oyster emulsion, burnt onion, and Kaffir lime oil, and Roasted scallop with wakame seaweed salad, ponzu sauce, quinoa, and noisette butter air, each reflecting his inventive approach to flavour and technique.
The Xara Collection is also delighted to welcome newly appointed Head Chef Alan Tabone, who’s culinary identity is rooted in his upbringing among homegrown fields and mornings spent fishing, inspiring his belief in simplicity and purposeful flavours. Trained at the Institute of Tourism Studies, he refined his skills across England, Malta, and Michelin-starred London restaurants before becoming Executive Chef at Gracy’s Art and Supper Club.
Together, Chef Davide and Chef Alan blend classical discipline with contemporary creativity, delivering dishes that are elegant, expressive, and deeply connected to Rosami’s produce-driven ethos.
This new chapter extends beyond Rosami to OKA’s at The Villa, which now features a new thoughtfully curated menu that pays homage to Rosami’s culinary excellence. The menu reinterprets Mediterranean flavours with creativity and care, offering a relaxed yet elevated dining experience that ensures both quality and value in every dish.
