We are seeking an enthusiastic and dedicated professional for De Mondion, our prestigious Michelin-starred restaurant.

The Role
The ideal candidate will play a key role in delivering a world-class dining experience by guiding guests through the restaurant’s curated wine list and creating exceptional wine pairings that complement our contemporary Mediterranean tasting menus.

Key Responsibilities

  • You will be the restaurant’s expert on wine while ensuring five-star service to our patrons.
  • As a Senior Sommelier, you will delight our guests by helping them choose the best wine to complete meal experiences.
  • Develop and mentor Sommeliers and front-of-house colleagues.
  • Drive beverage revenue through strategic recommendations and upselling.
  • You will be responsible for creating and updating the wine list in coordination with the F&B Manager, as well as ensuring all beverages are stored securely.
  • You will share your knowledge through informative training of the outlet team members and management.

What We’re Looking For

  • We are seeking a thorough professional who is adept at new wine trends and makes recommendations with confidence and passion.
  • You are passionate about wine and have relevant experience in a similar property
  • Minimum of 3-5 years’ experience as a Sommelier within a Michelin-starred or luxury fine dinning environment.
  • Formal wine certification (e.g., WSET Level 3+, Court of Master Sommeliers, or equivalent) is preferred.
  • Previous experience supervising or mentoring Sommeliers or front-of-house teams.
  • Valid Food Handler Licence in accordance with Maltese regulations (maintained at all times).
  • Strong commercial awareness and ability to maximise beverage revenue.
  • Fluency in English is essential; additional languages are considered an asset.
  • You have a natural flair for service and delivering a strong service culture, with the ability to motivate and develop others.
